Chocolate Cherry Bread

moist and fluffy fruit cake studded with sweet cherries, dark chocolate, almonds, walnuts, and sunflower seeds.





I have to admit, I've become a bit burnt out on banana bread, so one afternoon, we decided to try baking something new. We grabbed our biggest mixing bowl, tossed in some bread flour, eggs, cinnamon, yogurt, brown sugar, fresh cherries, dark chocolate and chopped almonds - and we fell in love with the very first bite.


I love to enjoy a slice of this bread with my little one in the afternoon. It pairs beautifully with some peanut butter, chia jam, and an oat latte <3

Choco Cherry Bread


Ingredients:

  • 1 c oat flour

  • 1 tsp baking powder

  • 1 tsp apple cider vinegar

  • 1 tsp cinnamon

  • 1/2 c brown sugar

  • 3 eggs, or flax eggs

  • 2 tbsp butter/olive oil/peanut butter

  • 1 tbsp agave or honey or molasses

  • 60g coconut yogurt

  • Pinch sea salt

  • 1 tsp vanilla extract

  • 1/2 c chopped nuts: almond, walnuts

  • 1 handful sunflower seeds

  • 1 c cherries, pitted

  • Handful dark chocolate, chopped


(Makes 6-8 slices)


Method:

1. Preheat the oven to 350 F.

2. Chop the almonds, walnuts and dark chocolate and set aside. You have the option here to pre-toast your walnuts in a skillet before adding them to the bread later.

3. In a large bowl, mix all dry ingredients to combine. Slowly add in wet ingredients, and the eggs one at a time (be careful not to overmix).

4. Fold in the pitted cherries, nuts, seeds, and chocolate.

Pour batter into a greased or lined bread pan and top with a few extra chopped cherries and/or chocolate chunks.

5. Bake the loaf about 40-55 minutes (this all depends on your oven). Insert a test toothpick into the center of the loaf at 40 minutes. If it comes back out clean, the bread is done.

6. Once the bread has finished baking, allow to cool on the counter for at least 20 minutes before slicing. Top with a dollop of ice cream, whipped cream, coconut yogurt, frozen berries, peanut butter, or chia jam. Enjoy!
