Banana Nut Blondies

These moist, fluffy, chewy banana nut muffins with chopped nuts and a sprinkle of brown sugar on top will win your heart. Prep only takes minutes, and the bars turn out perfectly each time. What makes these blondies the best?


*Bananas – Use overripe bananas to make this bread sweet, moist, and properly banana-flavored.

*Brown sugar – In the batter and sprinkled on top before baking. The bread tastes sweeter, almost caramel-like, thanks to the brown sugar. More importantly, bananas and brown sugar go together like pb & j.

*Topping – Each blondie is topped with a sprinkling of brown sugar, chopped walnuts, and granola. This adds a delicate sweet and crunchy layer on top of each blondie.


Banana Nut Blondies


Ingredients:

  • 2 bananas, mashed

  • 100g flour, gluten-free

  • 1 scoop vegan protein powder

  • 1 teaspoon pure vanilla extract

  • Pinch salt

  • 1 tsp baking powder

  • 1 tbsp lemon juice

  • 1 egg or flax egg (room temp)

  • 75g coconut yogurt

  • 2 tbsp maple syrup or agave

  • 1 tsp cinnamon

  • 40g chopped walnuts and pecans (reserve pieces to top)

  • 1-2 tbsp brown sugar (reserve some for topping)

Method:


1. Preheat oven to 350°F.

2. In a large bowl, whisk mashed banana, vanilla, egg, maple syrup, yogurt, lemon, and brown sugar until well combined.

3. In a separate bowl, combine the flour, protein powder, baking powder, salt, and cinnamon. Add dry ingredients to the wet ingredients and lightly stir the batter until almost combined. Fold in chopped nuts. Be careful not to over-mix.

4. Grease a baking pan* (I used a 12-cavity brownie bar pan, but you can use a muffin pan or any other you'd like), and divide the batter evenly among the cups. Sprinkle the top of the each blondie with brown sugar, granola, and chopped nuts. Bake for 20-30 minutes* (mine needed ~22 minutes), until a toothpick inserted into the center comes out clean. Place the pan on a wire rack to cool. Drizzle with nut butter or serve in a yogurt bowl and enjoy!
