Chocolate Chia Pudding

dark cocoa, banana, chia seeds, nut butter, coconut yogurt, forest berries.




If you need a breakfast that's quick, easy, subtly sweet, and well-balanced, this is the one for you. The base is super creamy and delicious, and you can meal prep multiple jars of this at once, for a grab and go brekkie or treat throughout the week. It only takes 10 minutes to make in your blender or food processor, and simply pop it in the fridge to set for a few hours or overnight before topping with dollops of coconut yogurt and your favorite toppings. I love to use cacao nibs, granola, nuts & seeds, frozen berries, or peanut butter.

Choco Chia Pudding


Ingredients:

  • 350g coconut yogurt

  • 40g vanilla protein powder *or extra yogurt, or oat flour

  • 1 ripe banana

  • 3 tbsp chia seeds

  • 2-3 tbsp dark cocoa powder

  • 2 tbsp nut butter

  • Pinch sea salt

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/2 c almond milk


Topping:

  • Coconut yogurt

  • Forest berries

  • Maple syrup, honey, or agave


(Serves 3)


Method:

1. Add all the main ingredients to a blender or food processor and pulse until smooth and creamy.

2. Pour the chia pudding into three separate glass jars or small containers and allow to sit in the refrigerator at least one hour (preferably overnight) for a ready-to-go breakfast or treat.

3. Top each chia pudding with a layer of coconut yogurt, frozen berries, and any other of your fav toppings. Enjoy!
