My thoughts now, and forever following this bowl. Ever since trying this tomato and egg rice for the first time, I wake up each morning with a violent craving for it. It takes less than 10 minutes to make, and with added lean beef mince, it comes out to a whopping 40 grams of protein. Everything is made in one pot, so feel free to add in any veggies you like! I love to add fresh spinach and bell pepper.

What do you need for this breakfast?
*Eggs - soft scrambled with the perfect spices.
*Leftover Rice - or fresh if you don't have any on hand!
*Beef Mince – I pre-make my lean beef, but you can brown in a pan before making this breakfast bowl. If you don't have any beef, this ingredient can be omitted.
*Tomatoes - Fresh, vibrant, and juicy; the more the better.
Tomato n' Egg Rice
Ingredients:
1 - 2 eggs or egg whites or tofu
Green onion
1 tsp sesame oil *or oil spray
1 tbsp minced garlic
1 tbsp soy sauce
1 tbsp rice vinegar
2 whole tomatoes
4 oz lean beef mince *optional
Spinach and bell pepper *optional
Salt, black pepper, everything bagel seasoning, cilantro, chili flakes
(Serves 1)
Method:
1. Preheat and grease a wok on medium low heat.
2. Quarter your tomatoes and slice the green onion. *if not using pre-made rice or beef, cook rice according to package directions and brown beef in pan, drain, then set aside. I add sliced bell pepper in with my beef when I fry it.
3. Add minced garlic and whites of the green onion to the heated wok. Cook until fragrant, ~3 minutes.
4. Add in tomatoes and cook until jammy, stirring occasionally. Push to the side of the pan, and pour in eggs (beaten). Season generously with salt, pepper, everything bagel, and chili flakes. Cover with a lid.
5. Once eggs start to set (~1-2 minutes), push in toward the center of the pan using a spatula to soft-scramble. Mix the egg and tomato together, adding in rest of the green onion and some spinach (if you like). Turn off the heat and remove wok from the burner.
6. To a bowl, pour in rice, top with beef mince, bell peppers, tomato egg scramble. Use a spoon to drizzle over more soy sauce, add more green onion, and enjoy!
