We're giving this classic breakfast a makeover: pumpkin pie style. You can make the most delicious, sweet, and fluffy brioche French toast with minimal ingredients, and just 20 minutes. If it's Monday morning, you can bet that I'll be needing something extra special to jump start my week. The star is this seasonal goodie find at Aldi; pumpkin spice brioche bread. Rich pumpkin flavor, spongy texture, and light buttery sweetness all in one loaf.
The next, if not most important ingredient is pumpkin spice coffee creamer. I use Chobani's and pour a long smooth drizzle into my French toast batter. Heavy creamer, who? We don't need her.
What you need to make this Pumpkin Brioche French toast:
Brioche- I cannot recommend a loaf of pumpkin spice brioche enough, but any good brioche will do!
Coffee Creamer- Using your favorite creamer adheres to the bread better than regular milk, and allows the sweet flavor to soak into the thick brioche. Each bite of this toast literally melts in your mouth!
Butter- Buttering the pan adds a rich flavor to the toast, and helps us get that beautiful crisp, golden crust. Maple butter is the creamy treat we whip into our whipped maple butter topping ;)
Eggs-Â Crucial for binding the ingredients together and getting that rich, custard texture. You an also substitute with flax egg.
Pumpkin Pie Spice-Â Infuses the bread with warm, autumnal spices.
Tips and Tricks:
Toppings: We love this toast with walnuts, pumpkin seeds, warm maple syrup, honey, granola, or caramelized bananas or apples!
No protein powder? You can substitute with extra maple butter or powdered sugar, or even PBfit (peanut butter flour).

Pumpkin Brioche French Toast
Ingredients:
2 - 3 slices of pumpkin spice brioche bread
French Toast Batter
1 egg, or flax egg
1 tsp flax seed
1 tsp pumpkin pie spice (cinnamon, ginger, nutmeg, allspice)
Pinch sea salt
2 tbsp pumpkin coffee creamer
1/2 cup vanilla almond milk
2 tbsp pumpkin puree
Whipped Maple Butter:
1/2 cup pumpkin yogurt
1 tsp pumpkin pie spice
2 tbsp maple butter
1 scoop vegan protein powder *or sub with powdered sugar, extra maple butter, or PBfit
(serves 1)
Method:
1. In a shallow bowl, whisk batter ingredients until smoot and frothy.
2. Dunk each slice of brioche into the batter and soak about 30 seconds per side.
3. Butter a large skillet and heat over medium-low. Add the deliciously soaked bread and cook about 3-4 minutes per side. We're looking for that golden brown crust with a soft middle.
4. In a separate medium sized bowl, add in the whipped maple butter ingredients and whisk thoroughly. It should be smooth and fluffy.
5. Plate up your brioche, use a mini ice cream scooper (if you're feeling cutesey) to add a couple collops of the whipped maple butter, pour over some warm maple syrup or honey, and tuck in :)
