Berry Croissant Bake

with fluffy, buttery croissants, blackberry cream custard, tart berries and sweet cherries.



If you don't know what to make for breakfast, or are tired of always having the same thing, you have got to try this berry croissant bake. It's unbelievably delicious, buttery, flakey, and so easy to make.


You start with tearing some croissants (or any bread you like!), into small and large pieces. Layer them in a bread or oven-safe pan, making sure you fill all the gaps, pour over your blackberry cream custard, top with fresh fruit, bake, and enjoy :)


You can also bake ahead of time for an effortless morning. Just allow to cool before wrapping and storing in the fridge (3-4 days). My baby girl and I make this croissant bake at least once a week, and we love to try different variations. Our favorites are orange, mixed berry, and cinnamon roll.

What you need to make this breakfast:


*Croissants – I buy a pack of mini croissants from Aldi, but use any bread you like!

*Berries – Fresh or frozen. I think sweet cherries pair perfectly with the tart blackberries.

*Custard – With a protein boost! A mix of protein powder, melted blackberries, almond milk, vanilla, maple syrup, and orange zest.




Berry Croissant Bake


Ingredients:


BAKE:

• Croissants (I use about 7 mini croissants)

• 1 c blackberries

• 1/2 c sweet cherries (pitted)

• 1 tsp cinnamon + 1-2 tsp stevia (blended)


BLACKBERRY CREAM CUSTARD:

• 1/4 c blackberries (melted)

• 1 c unsweet vanilla almond milk

• 1 tsp vanilla extract

• 1 scoop vanilla protein powder

• Orange zest

• 1 tbsp sf maple syrup or agave or honey


(Serves 4)


Method:


BASE:

1. Preheat oven @350F and grease a bread pan or small oven-safe baking dish.

2. Roughly tear your croissants into pieces varying in size (Please don't worry about making them perfect! It will be perfect, trust me). Add croissant pieces to your baking dish. Make sure you fill all the gaps. Sprinkle blackberries and cherries evenly over the croissants and set aside while you make the custard.

3. Add some blackberries to a ramekin and melt down in the microwave, ~40 seconds. Use a fork to mash them. Pour the blackberry juice into a mixing bowl with the maple syrup, vanilla, protein powder, orange zest, and milk. Mix until smooth and creamy.

4. Pour blackberry cream evenly over the croissants and berries. Top with a sprinkle of cinnamon sugar.

5. Let rest for at least 20 minutes (or even refrigerate over night).

6. Bake for 35-40 minutes.

7. In the last 8 minutes of baking I push a few more fresh berries into the top of the croissant bake, but this is optional! Once done, it should be golden brown and set in the center.

8. Allow to cool a few minutes before cutting into the croissants using a spatula. Serve warm with a sprinkle of powdered sugar. Enjoy, my loves <3
