Eggs benedict is a traditional American breakfast; an open-faced sandwich with toasted bread, ham or bason, poached eggs, and rich hollandaise.
I've never had eggs benedict before, so I when I decided to try it for the first time, I was shocked to read that hollandaise is just basically beaten eggs and butter. Personally, that does not sound super appealing to me.
I decided to try out a twisted hollandaise sauce with no butter OR eggs! It was so easy to make, with plant-based ingredients, and tasted amazing. Just mix the ingredients in a jar and tip a generous pour over your eggs (cooked however you like best)!

Eggs Benedict
Ingredients:
• 2 eggs
• Pinch salt, pepper
• 1 slice grainy, seedy bread OR an english muffin (toasted)
• 1-2 slices turkey bacon or ham or turkey
• 1 handful arugula
• 2 tbsp pico do gallo
Hollandaise:
• 2 tbsp plain nonfat Greek yogurt
• 1 tsp dijon mustard
• 1/4 tsp: garlic powder, turmeric, salt
• Pinch paprika
• 1 tbsp nutritional yeast
• 1 tbsp lemon juice
• 1 tsp white wine vinegar
(Serves 1)
Method:
Hollandaise:
1. Add all sauce ingredients to a jar or small bowl and mix until smooth. You may need to add a little bit of water to get a drizzly consistency.
Eggs:
1. If you want to poach your eggs, fill a saucepan with ~3 inches of water. Bring the water to a boil and then reduce heat to a simmer.
2. Add a little splash of vinegar to the water (*optional).
3. Crack one egg into a small measuring cup and gently lower the egg into the simmer water. Repeat with the 2nd egg. Cook about 3-5 minutes.
4. Remove the poached eggs with a slotted spoon.
5. While the eggs are cooking, place the slices of bacon in a skillet and cook on medium-high heat for about 1-2 minutes per side.
6. If you want to cook your eggs over easy: I added two cookie cutters to a skillet on medium-low heat, sprayed everything with olive oil, and cracked an egg into each cookie cutter. I covered the pan with a lid and cooked the eggs for about 3-4 minutes, flipping halfway through. Your egg whites should be set.
Assemble:
1. Toast your bread. Add it to a plate and top with arugula, turkey bacon, pico de gallo, and the cooked eggs. Pour your hollandaise sauce over the top and top with chives or green onion. Serve some berries on the side, tuck in and enjoy!
