Whipped Feta Sweet Potatoes
Ingredients:
• 1-2 medium sweet potatoes, cubed
• 2 tsp honey
• 1/2 c reduced fat feta cheese
• 2 tbsp light cream cheese
• 1/2 c light cottage cheese
• 1/4 tsp rosemary, sage
• Pinch salt
• Pinch lemon juice
• Olive oil *optional
Pecans:
• 1-2 handful(s) pecans + walnuts, chopped
• 1/2 - 1 tsp cinnamon
• 2 tbsp maple syrup or honey
(Serves 3 )
Method:
Whipped Goat Cheese:
1. In a food-processor combine the cheeses, lemon and herbs. Pulse until smooth, cover and refrigerate until ready to serve.
Roasted Sweet Potatoes and Pecans:
1. Pre-heat the oven to 375 degrees.
2. On a sheet pan, spread out the cubed sweet potatoes. Drizzle with cinnamon and a little olive oil (*optional, can also use cooking spray).
3. Roast for 30 minutes, turning the potatoes about 15 minutes through. Potatoes should be soft.
4. Add the chopped nuts to a greased skillet on medium-low heat with the syrup and cinnamon. Fry about 5 minutes, turning the pieces occasionally to toast evenly.
4. To serve, spread the whipped feta on the bottom of a plate and scoop the potatoes on top. Finish with flaky sea salt, caramelized pecans, and honey. Enjoy!
