Smoky BBQ Stuffed Sweet Potato

with pan-seared pulled chicken, melty cheese, and cilantro.



There is no life without these potatoes. This experiment turned out to be so phenomenal that we all had seconds.


Okay, maybe thirds. Tender, pulled chicken, smoky and pan seared in tangy BBQ sauce, and then stuffed into a golden roasted sweet potato. You finish it all off with melty cheddar and fresh cilantro. The seasoning for the chicken is paramount here - I wanted to do kind of a bourbon, brown sugar taste, but without any actual alcohol. The secret is vanilla extract. Serve with your favorite vegetable; we love to serve ours with garlic butter asparagus and a pinch of lemon juice.

Smoky BBQ Stuffed Sweet Potato


Ingredients:


• 2 sweet potatoes

• 200g grilled chicken strips *pre-cooked Tyson (or any alternate protein)

• 4 tbsp SF BBQ sauce

• 1 tsp Swerve brown sugar

• 1 tsp vanilla extract

• ½ tsp basil

• 1 tsp garlic powder

• Salt + pepper, to taste


TOPPINGS:


• Shredded cheddar cheese

• Cilantro


(Serves 2)


Method:


1. Preheat oven @ 425F.

2. Poke some holes in your potatoes using a fork and cut lengthwise (but not all the way through).

3. Add to a lined baking sheet, spray with nonstick spray, and bake 28-30 minutes. Potatoes should be soft when done.

4. While baking, shred the chicken (I used a food processor) and then add to a greased saucepan on low heat. Add the BBQ sauce, spices, brown sugar, and vanilla. Mix well and heat until warmed through (~10 minutes), stirring often.

5. Plate your potatoes, top with the chicken, cheese, cilantro, and serve with your favorite veg on the side (asparagus or broccoli pair really well!). Enjoy.
