Seven-Layer Dip

with refried beans, crema, fresh salsa, ground turkey, guacamole, cheese, and cilantro.



Yes, I said it, a SEVEN layer dip. With the perfect level of spice, cilantro lime, bright and fresh pico de gallo, ripe avocado, smooth cream, shredded cheese, and savory beans. It is just as tasty on its' own, or you can enjoy it with your favorite sides. I opted for blue corn tortilla chips (the only chip good enough for this dip), crunchy carrot chips, slices of zucchini, cucumber, and sweet peppers. This dip is also awesome with some added chopped romaine or butter lettuce.


Do you like your dip spicy? Add extra seasonings, hot sauce, or jalapeños.

Want to keep it low carb? Leave out the tortilla chips, use a little less beans and add extra turkey or beef.

Vegan? Substitute the ground turkey for extra beans, tofu, or even chickpeas.

How to make this dip?


*Refried beans– Make up the first layer. Mix in some milk or water with the beans to smooth them out. This keeps your dippers from breaking off in the beans.

*Crema– I use plain fat-free Greek yogurt mixed with 1 tsp of taco seasoning and lime juice.

*Ground Turkey – I use 99% lean mixed with a bit of chicken broth and salsa. You can also use beef, sausage, chicken, tofu, black beans, or even chickpeas.

*Squash– I added some diced zucchini and yellow squash for added veggies, but this is optional.

*Avocado- You can either use a whole avocado, pitted and mashed, or store-bought guac to save time. Placing this in the middle retains the freshness of the avocado.

*Salsa- I added a blend of medium chunky salsa and fresh pico de gallo.

*Cheese - My dip uses fat free mozzarella and cheddar, but use any cheese you prefer.

*Toppings - Green onion, cilantro, diced tomatoes.

*Dippers - Sliced veg like bell peppers, cucumber, and zucchini, tortilla, pita, carrot, or even plantain chips.






Seven-Layer Dip


Ingredients:


DIP

  • 300g refried beans

  • 1-2 tbsp water or milk

  • 200g plain nonfat Greek yogurt

  • 1-2 tsp taco seasoning

  • 1 tbsp lime juice

  • 4 oz. lean ground turkey

  • Salt, pepper, garlic powder to taste

  • 1 zucchini and/or yellow squash

  • 1/2 cup salsa and/or pico de gallo

  • 1 avocado, pitted, or store-bought guacamole

  • 60g fat-free shredded mozzarella and cheddar cheese

  • Cilantro, diced tomatoes, green onion, lime juice

SIDES:

  • Tortilla chips

  • Sliced cucumber, bell pepper, zucchini

  • Carrot chips

  • Romaine


(Serves 2)


Method:

1. 1st layer: Mix 1-2 tbsp of water or milk into your refried beans to give them a creamier texture. Add a layer of beans to the bottom of your bowl.

2. 2nd layer: Mix taco seasoning and lime juice into your plain yogurt until smooth. Add a layer of cream on top of the beans.

3. 3rd layer: Add pre-cooked and crumbled ground turkey (optional to mix in salsa and chicken broth) on top of the cream.

4. 4th layer: Sprinkle diced squash on top of the meat. I lightly sauté mine before adding.

5. 5th layer: Smooth a layer of mashed avocado (with a squeeze of lime) or store-bought guac over the meat and squash.

6. 6th layer: Pour salsa over top of the guacamole, ensuring all the avocado is covered.

7. 7th and LAST layer: Top with shredded cheese, diced tomato, green onion, cilantro, and serve your favorite dippers on the side. Take a step back, take a moment to be proud of your masterpiece, and enjoy!
