This is the 20-minute pasta you NEED in your life. Fresh spinach gnocchi, spicy Italian sausage, crumbly feta and herbs poured over a bed of homemade red sauce, quickly blitzed in a blender. Bright, fresh, tangy, and just a tad spicy.

Creamy Gnocchi
Ingredients:
GNOCCHI
280g frozen spinach
400g tofu or white beans
2 tbsp olive oil
4 tbsp vegan parmesan
Salt, pepper to taste
1 - 1 1/2 c flour
RED SAUCE:
300g crushed tomatoes
4 tsp sun-dried tomato paste or 1/4 c whole sun-dried tomatoes
200g lite cottage cheese
2 red or orange bell peppers
1/2 tbsp Italian seasoning
1/4 tsp: chili flakes, salt
1/4 tsp oregano
2 tbsp minced garlic
TO SERVE:
Impossible sausage patties (2) *or alternate protein
2 handfuls cherry tomatoes
Feta cheese
Fresh basil
(Serves 2)
Method:
1. Gnocchi: Defrost the frozen spinach in a pot and then squeeze out the excess water. Mix the spinach, tofu, oil, salt and parmesan in a food processor until it forms a green dough.
Stir in the flour and shape into little balls. Lightly press down each with a fork to give them that proper "gnocchi" look (*this is optional). Boil in salted water until they float to the top. You can also use store-bought pasta to save time!
2. Roast or pan fry your bell peppers until they look slightly charred. Add the peppers and all sauce ingredients to a blender and pulse until smooth.
3. Pour the red sauce into a shallow bowl, top with gnocchi, crumbled spicy Italian sausage (I used a frozen Impossible sausage patty and air fried it), cherry tomatoes, feta, and basil. Enjoy!
